Dear Parents and Carers of Year 11 Hospitality and Catering Students
During the week beginning Monday 20th January students who have been studying the Hospitality and Catering L1/2 course will be taking part in their three-hour practical exam. The students have been well prepared in class for the exam and have produced a time plan with lists of equipment and ingredients and a detailed order of work. They have also been informed they can practice their dishes at home in advance to the exam and this is widely recommended.
This exam contributes to over half of the NEA (internal component) marks and significant evidence must be collected to support the marks allocated. Students have been informed which day they will have the exam and therefore it is essential they are in school on that day. The exam will begin at 9.00am, students can set up all equipment the evening before at 3.15pm or on the morning of the exam from 8.00am. Basic ingredients will be provided in school and some ingredients will need to be brought from home depending on their choice of dishes. Students are aware of these ingredients. Should you have any financial concerns for the final NEA, please do not hesitate to contact myself.
Final dishes will be photographed as evidence and students will then be able to take food home at the end of the day.
Students will be assessed on the following:
· Their ability to work safely, follow correct food safety and hygiene practices.
· Preparation of the dishes, demonstrating a variety of basic, medium and complex preparation and knife techniques.
· Cooking of the dishes, demonstrating a variety of basic, medium, and complex cooking techniques.
· Presentation the dishes in a way that is appropriate for the brief.
